Oven-Baked or Grilled Homemade Pizza

For cooking on the grill with a pizza stone at the game or at home

Homemade dough and pizza is a great option for an afternoon tailgate before the game or a watch party at home.

Whether you cook the pizza in an oven or on the grill, you will need a pizza stone, a metal pizza peel, a pizza cutter (available as a kit through Amazon), and semolina flour.

The recipe makes one medium-sized pizza (8-10 slices).


Ingredients

—Dough—
2 cups bread flour
1/2 tsp sugar
2 tsp salt
1 envelope dry yeast
2/3 cup water at 110 degrees (not too hot)
1 tablespoon olive oil
Optional: Garlic powder (I use this to give my crust flavor)

—Toppings—
Can be whatever you would like, but this is my go-to pizza:
Pepperoni (I use Trader Joe’s gourmet pepperoni)
Pizza sauce (Trader Joe’s ready-made refrigerated pizza sauce)
Mozzarella cheese
Three-cheese blend shredded cheese
Sliced black olives
Sliced artichokes hearts
Fresh sliced tomato (to put on before serving)


Instructions

Pizza Crust Dough

(prepare at least one hour before ready to make the pizza):

1. Activate the yeast by placing it in a glass measuring cup and adding the 2/3 cup of warm (110°) water for 10 minutes prior to using it (if the water is too hot it will kill the yeast). The yeast should be bubbly and foamy.

2. Add the flour, sugar, salt, and garlic powder (if used) to the bowl of a stand mixer or food processor with a dough blade—mix together well.

3. Add the oil and yeast and mix until the dough forms into a ball. If the dough is sticky, add flour 1 tablespoon at a time. If the dough is dry, add water 1 tablespoon at a time.

4. Scrape the dough onto a floured surface and gently knead it into a ball. Put 2 teaspoons olive oil in a large bowl, place the dough in the bowl and cover with plastic wrap, and put it in a warm area until the dough doubles in size (about 1 hour).

Preparing the pizza

1. If you are cooking the pizza in the oven, place the pizza stone on the lower rack and preheat to 450 degrees. Do not place the pizza stone in an already heated oven—they need to heat up together or you risk cracking the stone.

2. If you are cooking the pizza on the grill, place the cold stone on a cold grill and then heat up to between 400-500 degrees. You can close the lid on the grill to help the stone heat more quickly and uniformly.

3. Once the dough is done rising, place it on a flat, floured surface. I prefer to hand-stretch my dough which makes it crispier, or you can roll it out.

Place the prepared crust on the pizza peel dusted with semolina. Drizzle a little olive oil on the crust and then spread the pizza sauce over the surface, as much or little as you like.

Then layer with the mozzarella cheese, pepperoni, black olives and then the three-cheese blend. Or with whatever toppings you choose.

4. Using a spatula, gently move the pizza off the pizza peel onto the stone and cook until the crust is crisp and the toppings are melted, about 10-12 minutes. You can remove the pizza stone from the oven and leave the pizza on it to keep it warm, or slip the pizza back onto the pizza peel to be moved to a cutting board.

5. Top with fresh tomato, pepper flakes, and parmesan cheese.
